One option is the Nortel NCTE in Converged IP networks. It has a lot of vendor neutral VoIP technology content.

I concur with Mark and expand on the offerings from Nortel on VoIP.

When it comes to VoIP Nortel does offer a very compelling product. As is quoted on the Nortel Press website

"Nortel certifications are a competitive differentiator because unlike other vendor certifications, Nortel technology certifications address multi-vendor solutions so prevalent in today's environment"

Nortel offers the Nortel Certified Technical Expert (NCTE) as Mark noted along with offering the Nortel Certified Technology Specialist (NCTS) - Converged IP Solutions (a pre-req for the NCTE anyway). The NCTS certification path requires one to pass the Nortel exam 920-803 Technology Standards while the NCTE requires the 920-803 along with the 920-804.

While there are different ways to prepare for the NCTS (see website), the two that I have personal insight into are the e-learning (course 0365T - VoIP Technologies) and the recently released Nortel Press book "Introducing VoIP Technologies"

The course is a self-paced learning while the book will help to prepare you for the Technology Standards and Protocols for IP Telephony Solutions (920-803) and Technology Standards and Protocols for Converged Networks (920-804) which is part of the NCTE Nortel Professional credential.
